PALEO VEGETABLE SCRAMBLE paired with your favorite banana bread to make for a lovely September morning...
Now that's a beautiful start to introducing the fall season...
Now for the RECIPE IN
1/2 Cup Organic Green Beans
4-5 Farmers Market Cherry Tomatoes
2 Fresh Garlic Cloves
2-3 Leaves of Fresh Basil
1 TBSP Organic Coconut Oil
2 Full Eggs + 2 Portions Egg Whites
Gather ingredients from the local market.
Choose organic if possible.
Chop up mixture of various veggies & lovely herbs & spices.
Scramble eggs in a bowl.
Saute' in a pan ( link to pan on amazon) with a non-stick spatula until GOLDEN browned.
Add scrambled eggs.
Stir occasionally on low/medium heat until eggs are fully cooked.
Serve alongside your favorite banana bread, or if you are going less on the carbs, & higher fat, this scramble goes lovely with avocado on top!
Garnish with some extra fresh basil on top, & ENJOY!
