Paleo Tuxedo Cookie

Gluten free, Paleo

It's Christmas time in full swing, & with that said, I figured it would be appropriate to share with you all one of my favorite creations, the Paleo Tuxedo Cookie ;) Why the fancy name you say? Well, it's pretty classic, & easy to make... A gluten free & paleo friendly treat to satisfy those cookie cravings around this time of year... and all through the year haha. Hey! All in moderation friends...

Ingredients

  • 3 cups Almond flour

  • 1 tsp Baking soda

  • 1 tsp Salt

  • 1 tsp Vanilla extract

  • 1/2 cup Coconut oil, unrefined

  • 2 Eggs

  • 3 TBSP Pure Maple Syrup

  • 1/2 cup Extra Dark Chocolate Chips

  • 1/2 cup white chocolate chips

  • Optional: 1/2 cup Walnuts or Pecans

PREP TIME: 10 Minutes

COOK TIME: 10 Minutes or until Golden Brown ;)

Directions:

Preheat oven to 375 F.

  1. In a medium-sized mixing bowl combine dry ingredients.

  2. In a small mixing bowl, combine eggs, maple syrup, and vanilla extract.

  3. Pour wet ingredients into dry and beat until combined.

  4. Melt coconut oil, pour into batter, and continue to blend until combined.

  5. Stir in chocolate chips.

  6. On a parchment-lined or foil-lined baking sheet, drop balls of cookie dough, about a tablespoon in size.

  7. Bake for 10-15 minutes or until golden brown

  8. Enjoy! xoxo

Pour a cup of some of your favorite Almond Milk, a creamy, cool compliment to your warm, golden cookie! It’s a go to must with me & my boyfriend every time!
