Banana Pancakes

I just know, at one time or another, you have sung the song "Banana Pancakes" by Jack Johnson. And while singing that tune, you go, "Man!!! I really want pancakes now." But you go on with your morning, grab a quick breakfast bar from the pantry (if that! haha let's keep it real) & go on your way because those pancakes you've conjured up in your head are waaaay to tasty to be a quick making meal. Well friend, I can assure you you have come to the right place, because Elegant Edge Sport is all about KEEPING IT SIMPLE, using quality ingredients, all while knowing hunger will win & time is of the essence! Nobody's got time for that banana pancake to take an hour to prep... So here we go...

Put on that song...

For incredible sound, & mobile speaker to take virtually anywhere, this bluetooth speaker I got on amazon is my go to... it. works. amazing. Click on the picture if you'd like to try it out yourself! Some other ways I've used it are outdoor workouts, pool days, or obviously, when you dance & make banana pancakes...

Jack Johnson

Can't you see that it's just rainin'
Ain't no need to go outside

But baby
You hardly even notice
When I try to show you this
Song is meant to keep you
Doin' what you're supposed to
Wakin' up too early
Maybe we could sleep in
Make you banana pancakes
Pretend like its the weekend now
We could pretend it all the time
Can't you see that it's just rainin'
There ain't no need to go outside

Just maybe
Halaka ukulele mama made a baby
Really don't mind the practice
Cause you're my little lady
Lady lady love me
Cause I love to lay here lazy
We could close the curtains
Pretend like there's no world outside
We could pretend it all the time
And can't you see that it's just rainin'
There ain't no need to go outside

Ain't no need ain't no need
Mmm, mmm, mmm
Can't you…

Grab the Ingredients...

2 Ripe Bananas

1 Cup Organic Oats

1/2 Cup Organic Apple Sauce

4 Eggs

1 TBSP Vanilla Extract

Sprinkle of Cinnamon

Guittard Extra Dark Chocolate Chips

As you mix,

Shake those hips ...

Yes, I know this is a picture in the ice rink, but just a reminder, kitchens can be ice rinks too... or so I thought as a kid lol. Spinning with socks on yepppp.

*In all seriousness please do not try this at home it actually is dangerous... which is why my mom always yelled at me for it  all. the. time.

Side note: Yes, my shirt says, "With enough coffee I could rule the world." It seemed appropriate lol.

1. Using a magic bullet, food processor, or blender of choice (check out the kitchen page for ideas;)), blend Organic Oats to powder form.

2. In a large mixing bowl, mash bananas until there is only a little chuck in consistency. Add eggs, vanilla extract, & apple sauce.

3. Add in oatmeal flour slowly as you mix. I like wooden spoons specifically for this.

4. Sprinkle a hint of Cinnamon on top, & stir in.

5. Heat skillet or pan to Medium Heat ~350 degrees.

6. Pour batter in 1-2 spoonful sizes onto skillet or pan & if you want chocolate chips, this is the time to put them on your pancakes!

To control chocolate intake (high in calories you will thank me later), I like to put the chocolate chips on once I pour the batter onto the pan... usually in the shape of smiley faces. Whatever, I like happy pancakes lol. Judge away... my future kids will love it.

Once GOLDEN brown, FLIP FLIP FLOP TIME!!!! Dance. FLIP. Dance. FLOP.

7. Serve on a plate, & garnish with crushed walnuts & sprinkle of cinnamon on top!!!

Enjoy with someone special with your favorite cup of coffee :)

Bonus: Store leftovers in the freezer for even easier breakfast ;)
